Breakfast My Way

I have always loved breakfast foods…I love them at breakfast time, lunch time, dinner time, late night drunk time. You name a time and I am pretty much down to eat some eggs and bacon.

As a kid my mom did a great job of cooking us healthy breakfasts to go off to school with. On the weekends we indulged in the sweeter side of breakfast and ate pancakes or got breakfast sandwiches made on perfect Long Island bagels.

As an adult my love for breakfast hasn’t faded and I have come to really love cooking and creating new breakfast recipes.

Breakfast is considered one of the more important meals of the day, yet many people skip it. It has been shown that people that eat a healthy breakfast continue with other healthy habits throughout the day. It’s like kickstarting your day in the right direction just by eating a healthy breakfast, how cool is that.

Here are some of my favorite go-to breakfast recipes to keep you feeling good! Check them out.

I just tried this today. It was awesome! This is a new product at Wegmans. You can eat it cold or cook it in the microwave. I added bananas and cinnamon to mine. Super delicious and super filling.

Oats in general are a great breakfast and are super versatile. You can really create any flavor profile you want as they are relatively tasteless. Try making a huge batch ahead of time in your slow cooker. Add 8 1/2 cups of water and 2 cups of steel cut oats and cook on low for 7-8 hours. Flavor using berries, bananas, nuts, cinnamon, honey, maple syrup or anything else you want!

Egg  bakes, breakfast casseroles, power muffins…whatever you call them, they are an awesome protein packed way to start breakfast. They last all week and reheat beautifully and are so simple. Just pick the ingredients you want to include (veggies and meat) and cook ahead of time. Put all ingredients in a baking dish or into individual muffin tins. Cover with whisked eggs, Bake on 350 until eggs are cooked. 30 mins or so for a pan, less for muffins. Keep an eye on them.

Next we have pancakes. MMMM.

If you are super clean you can try these egg and banana pancakes. Yes, thats it. I swear. It makes a pancake.

If you aren’t super clean but still looking for a solid pancake batter with some added protein try these!

powercakessmFixed They are super delicious and if made with eggs and milk are packed with protein. I make a “syrup” by heating up some frozen berries. Put some Kerrygold butter on top and I’m in heaven.

I also love the ease of eating greek yogurt with some fruit and granola. Here are my go-tos.

Fage full fat greek yofurt and Purely Elizabeth granola. Its simple and perfect for your macros. Fat, protein and carbs in every bite.

Lastly you could make your own protein / breakfast bar. Simple and easy for transport or quick mornings.
